medium eggplant, each cut lengthwise into 4 or 5 thick slices
fresh lemon juice
fresh thyme leaves, chopped
Heat barbecue to medium. Grill eggplant until golden, up to 5 min. per side. Remove from grill to a platter and sprinkle with salt. Drizzle with lemon juice, honey and olive oil. Garnish with thyme, and serve.
