Grilled Eggplant and Honey

Ingredients

  • 2 medium eggplant, each cut lengthwise into 4 or 5 thick slices
  • 1/4 tsp salt 1 mL
  • 4 tsp fresh lemon juice 20 mL
  • 4 tsp honey 20 mL
  • 2 tsp olive oil 10 mL
  • 2 tsp fresh thyme leaves, chopped 10 mL

Directions

  • Step 1

    Heat barbecue to medium. Grill eggplant until golden, up to 5 min. per side. Remove from grill to a platter and sprinkle with salt. Drizzle with lemon juice, honey and olive oil. Garnish with thyme, and serve.
