Green Bean & Tomato Salad

Ingredients

  • 3/4 lb green beans, ends trimmed 375 g
  • 1 cup cherry or grape tomatoes, halved 250 mL
  • 1 small shallot, minced
  • 1/4 cup coarsely chopped fresh Compliments Basil 60 mL
  • 3 tbsp olive oil 45 mL
  • 1 tbsp Compliments Red Wine Vinegar 15 mL
  • 1/4 tsp each salt and pepper 1 mL

Directions

  • Step 1

    Cook beans in a large pot of boiling water until tender-crisp, about 2 min. Drain and rinse under cold water. Pat dry and transfer to a bowl with tomatoes, shallot and basil.

  • Step 2

    Whisk oil with vinegar, salt and pepper. Toss salad with dressing and serve.
