shelled cooked lobster meat (about 2 lobsters), chopped into bite-size pieces

Compliments Mayonnaise with Olive Oil
1 tbsp 15 mL
plain yogourt

celery stalk, finely diced
1 tbsp 15 mL
finely chopped chives, plus extra for garnish
2 tsp 10 mL
lime juice
pinch each salt and pepper

¼ cup 60 mL

Directions

Step 1
Combine lobster, mayonnaise, yogourt, celery, chives, lime juice, salt and pepper in large bowl.
Step 2
Split panini buns. Divide lobster mixture onto buns. Garnish with chopped chives. Serve with melted seasoned butter for dipping and lime wedges for squeezing.
