Cherry, Apple & Broccoli Slaw With Pine Nuts

Ingredients

  • 1 bag broccoli slaw 340 g
  • 2 cups cherries, pitted and halved 500 mL
  • 1/3 cup pine nuts, toasted 75 mL
  • 1 red apple, cored and cut into thin wedges
  • 1/2 cup coarsely chopped mint 125 mL
  • 3 tbsp olive oil 45 mL
  • 3 tbsp cider vinegar 45 mL
  • 1 tbsp honey 15 mL
  • 1/4 tsp each salt and pepper 1 mL

Directions

  • Step 1

    Combine broccoli slaw, cherries, pine nuts, apple and mint in a large bowl. In a small bowl, whisk together oil, vinegar, honey, salt and pepper. Pour over salad and toss.
