In a bowl, use a whisk to mix together pancake mix and 2/3 cup (150 mL) water until smooth.
Mix in ricotta, chocolate chips, graham crumbs, vanilla and orange zest.
Cook pancakes in skillet according to package instructions. Serve with butter and maple syrup, if desired.
