Toss blackberries with honey. Let stand 5 min. Meanwhile, puree kefir or yogourt with bananas and chia seeds in blender until smooth.
Layer blackberries, kefir/yogourt mixture and toasted coconut in four 1 cup (250 mL) glasses or jars. Cover with plastic or seal with a lid. Keep chilled. Serve within 12 hr.
Use frozen sliced banana for an icy parfait.
