Blackberry-Coconut Chia Parfait

Ingredients

  • 2 cups blackberries 500 mL
  • 1/3 cup toasted coconut 75 mL
  • 2 tbsp honey 30 mL
  • 1 1/2 cups coconut kefir or yogourt 375 mL
  • 2 bananas
  • 1/4 cup chia seeds 60 mL

Directions

  • Step 1

    Toss blackberries with honey. Let stand 5 min. Meanwhile, puree kefir or yogourt with bananas and chia seeds in blender until smooth.

  • Step 2

    Layer blackberries, kefir/yogourt mixture and toasted coconut in four 1 cup (250 mL) glasses or jars. Cover with plastic or seal with a lid. Keep chilled. Serve within 12 hr.

Tip

Use frozen sliced banana for an icy parfait.
