Zucchini & Parmesan-Stuffed Roast Chicken:

Prep time: 10 min | Total time: 1 hour 40 min | Serves: 6

Ingredients:

1 1/2 lb (750 g) roasting potatoes
1/4 cup (60 mL) olive oil, divided
1 1/2 tsp (7 mL) each salt and pepper, divided
2 1/4 cups (550 mL) grated zucchini (about 2 medium zucchini)
2 tbsp (30 mL) fresh breadcrumbs
3 tbsp (45 mL) grated Parmesan cheese
4 cloves garlic, minced and divided
2 tsp (10 mL) dried oregano leaves, divided
1 (3 1/2 lb/1.75 Kg) Blue Goose Certified Humane Whole Chicken
