Walnut Bread Pudding For Two

Ingredients

  • 1½ cups cubed artisan raisin bread or other dried fruit bread 375 mL
  • ¾ cup milk 175 mL
  • 1 egg
  • 2 tbsp sugar 30 mL
  • pinch ground cinnamon
  • 1/8 tsp vanilla extract 0.5 mL
  • 2 tbsp walnuts, coarsely chopped 30 mL
  • 2 tbsp prepared caramel sauce, optional 30 mL

Directions

  • Step 1

    Preheat oven to 350°F (180°C). Spread bread cubes on baking sheet; bake 12 to 15 min., until golden. Set aside to cool.

  • Step 2

    Meanwhile, in large bowl, whisk together milk, egg, sugar, cinnamon and vanilla. Add toasted bread cubes and walnuts; turning to coat. Let stand 15 min., stirring half-way, until bread is completely soaked.

  • Step 3

    Divide bread mixture into 2 greased 1 1/2-cup (375-mL) ramekins, spreading bread mixture into an even surface. Pour over any egg mixture left in bowl. Bake until golden and egg mixture is set, about 30 min.

  • Step 4

    Warm caramel sauce, if using, and drizzle over warm bread pudding to serve.
