In large microwaveable bowl, combine oats, coconut milk, cottage cheese, maple syrup, chia seeds and 1 1/2 cups (375 mL) water. Stir well to combine. Cover bowl with plastic wrap and place in refrigerator overnight (approx. 8 hr.)
Remove oats mixture from fridge; stir well. Microwave on HIGH 2 to 3 min., or until heated through. Stir again. Serve topped with kiwi, mango and shredded coconut.
Serve this as a chilled breakfast-to-go by dividing oat mixture, topped with fruit and coconut, into two lidded containers. Enjoy without reheating.
