Tomatoes Provençal

Ingredients

  • 1 cup fresh breadcrumbs 250 mL
  • 1 cup shredded Comté or Swiss cheese (approx. 4 oz/125 g) 250 mL
  • 2 cloves garlic, minced
  • 1 tbsp lemon zest 15 mL
  • 2 tsp chopped thyme 10 mL
  • ¼ tsp each salt and pepper 1 mL
  • 4 large tomatoes, cut into ¼ -in. (5 mm) slices

Directions

  • Step 1

    Preheat oven to 400°F (200°C). Grease 9 x 13-in. (3 L) baking dish. In bowl, combine breadcrumbs, cheese, garlic, lemon zest, thyme, salt and pepper.

  • Step 2

    Arrange slightly overlapping tomatoes slices in single layer in prepared baking dish. Top with breadcrumb mixture.

  • Step 3

    Bake 15 to 20 min., or until breadcrumbs are golden, cheese is melted and tomatoes are tender.

Tip

Instead of tomatoes, use 2 zucchinis, sliced ¼-in. (5-mm) thick.
