Tomato Jam

Ingredients

  • 4 lb Campari tomatoes, chopped 1.8 kg
  • 1 large onion, diced
  • 1 jalapeno pepper, seeded and finely chopped
  • 2 3/4 cups granulated sugar 675 mL
  • 2 tbsp apple cider vinegar 30 mL
  • 1 tbsp minced ginger 15 mL
  • 1 tsp salt 5 mL
  • 1/2 tsp allspice 2 mL
  • 1/2 tsp cracked black pepper 2 mL

Directions

  • Step 1

    Place tomatoes, onion, sugar, vinegar, ginger, salt, allspice and black pepper into a heavy-bottomed Dutch oven set over medium heat. Bring to boil, stirring constantly.

  • Step 2

    Simmer, stirring frequently, for 1 1/2 to 2 hours or until jam-like consistency and thick.

  • Step 3

    Cool completely. Transfer to freezer safe containers. Freeze for up to 1 month.
