Thai Coconut Chicken Skewers

Ingredients

  • 4 skinless, boneless chicken breasts, cut into 3/4 -inch (2 cm) cubes
  • 1 red onion, cut into 3/4-inch (2 cm) cubes
  • 2 mangoes, peeled and cut into 3/4 -inch (2 cm) cubes
  • 8 Thai Coconut Lime Seasoned Skewers
  • 1 tbsp olive oil 15 mL
  • 1 lime (optional)

Directions

  • Step 1

    Alternate chicken, onion and mango on skewers. Let stand 10 to 15 min. Meanwhile, preheat barbecue to medium-high and lightly oil grill.

  • Step 2

    Brush chicken, onion and mango with oil. Grill until chicken is firm and cooked through, about 5 min. per side (10 min. in total). If desired, squeeze fresh lime juice over skewers before serving.
