Cook noodles according to package directions; drain. Meanwhile, heat vegetable oil in wok or large skillet over medium-high heat. Cook ground pork, garlic and chili 3 to 5 min., breaking up pork, until the meat starts to brown.
Stir in mushrooms and spinach. Cook 2 to 3 min., or until greens are tender. Mix in noodles, soy sauce, hoisin, chili oil, sesame oil and rice vinegar. Cook, stirring, 3 to 5 min. until noodles have absorbed the sauces and oils.
Sprinkle with green onions and peanuts to serve.
The dried Asian egg noodles are sold in cellophane-wrapped packs of square "nests". Or substitute the egg noodles with angel hair pasta.
Use other boxed greens such as baby kale or arugula. Or add chopped full size greens such as chard or bok choy.
