Spicy Pork & Spinach Noodles

Ingredients

  • 10 oz dried Asian egg noodles 300 g
  • 1 tbsp vegetable oil 15 mL
  • 1 lb lean ground pork 500 g
  • 1 clove garlic, minced
  • 1 fresh red chili, seeded and diced
  • 1/2 lb shiitake mushrooms (or white mushrooms), woody stems discarded, thinly sliced 250 g
  • 1 package Compliments Organic Baby Spinach 1 L
  • 1/3 cup soy sauce 75 mL
  • 3 tbsp hoisin sauce 45 mL
  • 4 tsp Asian chili oil 20 mL
  • 1 tsp sesame oil 5 mL
  • 1 tbsp rice vinegar 15 mL
  • 3 green onions, thinly sliced
  • 1/4 cup Compliments Unsalted Dry Roasted Peanuts, chopped 60 mL

Directions

  • Step 1

    Cook noodles according to package directions; drain. Meanwhile, heat vegetable oil in wok or large skillet over medium-high heat. Cook ground pork, garlic and chili 3 to 5 min., breaking up pork, until the meat starts to brown.

  • Step 2

    Stir in mushrooms and spinach. Cook 2 to 3 min., or until greens are tender. Mix in noodles, soy sauce, hoisin, chili oil, sesame oil and rice vinegar. Cook, stirring, 3 to 5 min. until noodles have absorbed the sauces and oils.

  • Step 3

    Sprinkle with green onions and peanuts to serve.

Tip

The dried Asian egg noodles are sold in cellophane-wrapped packs of square "nests". Or substitute the egg noodles with angel hair pasta.

Use other boxed greens such as baby kale or arugula. Or add chopped full size greens such as chard or bok choy.
