Spicy Kofta-Style Sandwiches & Grilled Corn

Ingredients

  • ¼ pkg Sensations by Compliments Cracked Peppercorn
    Seasoned Butter & Canola Oil, at room temperature
    25 g
  • 4 corn cobs, husked
  • ½ tsp Sensations by Compliments Roasted Garlic
    & Sweet Pepper seasoning (grinder)
    2 mL
  • 1 lb lean ground beef 500 g
  • 1 tsp ground coriander 5 mL
  • 1 tsp ground cumin 5 mL
  • ½ tsp chili flakes 2 mL
  • ¼ tsp salt 1 mL
  • ½ baguette, cut into four sections, sliced lengthwise
  • ¼ English cucumber, thinly sliced
  • 1/2 cup plain 2% yogourt 125 mL
  • 4 lemon wedges
  • 4 wooden skewers, soaked

Directions

  • Step 1

    Spread seasoned butter on corn cobs and sprinkle with Roasted Garlic & Sweet Pepper seasoning. Wrap each corn cob in foil.

  • Step 2

    In large bowl, mix together beef, coriander, cumin, chili flakes and salt. Divide mixture into 4 portions; press each portion into a "sausage" shape around a skewer.

  • Step 3

    Place corn and sausage kabobs on grill preheated to high heat. Grill corn, turning often, 5 to 10 min., until cooked through. Grill kabobs 8 to 10 min., until meat is cooked through and browned.

  • Step 4

    Serve kabobs inside baguette sections topped with cucumber slices, spoonful of yogourt and squeeze of lemon. Serve grilled corn on the side.

Tip

Change up the flavour of the corn by using Sensations by Compliments Chipotle Lime Seasoned Butter & Canola Oil.
