Sausages with Potato, Kale & Apple

Ingredients

  • 1 lb mild or hot Italian sausage, cut in half lengthwise 500 g
  • 1 tsp canola oil 5 mL
  • 1 yellow-flesh potato, peeled, thinly sliced into rounds 0
  • 1/2 cup apple cider 125 mL
  • 1/4 cup fresh thyme, leaves only 60 mL
  • 1 tbsp chopped fresh sage 15 mL
  • 1 Cortland apples, cored, cut into thin wedges 0
  • 2 cups kale leaves, trimmed, thinly sliced 500 mL

Directions

  • Step 1

    In a non-stick skillet, cook sausages over medium-high heat, turning once, 7 min. Remove sausages and set aside. Add oil and potatoes to skillet and cook, turning once, 7 min. Add cider, thyme and sage to skillet, bring to a boil, cover, reduce heat and simmer 2 min. Add apple and cook, stirring gently, 3 min. Add kale and cook, stirring gently, 1 min. Add cooked sausages to skillet and serve.
