Ingredients

Compliments Portobello Caps, cut into 1-in. (2.5 cm) cubes
2 pkgs 227 g each
Compliments Sliced Button or Cremini Mushrooms
2 pkgs 113 g each
Compliments Shiitake Mushrooms, stems removed, thinly sliced

red pepper, finely diced
½ cup 125 mL
finely diced onion
¼ cup 60 mL
olive oil
2 tbsp 30 mL
balsamic vinegar
2 tbsp 30 mL
chopped garlic
2 tbsp 30 mL
chopped rosemary
2 tbsp 30 mL
thyme leaves
1 tsp 5 mL
salt
1 tsp 5 mL
ground black pepper
¼ cup 60 mL
finely chopped parsley

Directions

Step 1
Preheat oven to 190oC (375oF). In a large bowl, mix all ingredients except the parsley. Spread mixture evenly in a large roasting pan or baking sheet. Roast 10 min., stir and return to the oven. Repeat the roast-and-stir process 3 more times until mushrooms are tender. Sprinkle with chopped parsley to serve.
