Pomegranate, Fennel & Orange Salad

Ingredients

  • 2 pomegranates, seeds removed
  • 5 navel or blood oranges (or a mix of both), peeled and sliced into segments
  • 1 cup thinly sliced fennel 250 mL
  • 2 tsp honey 10 mL
  • 5 tsp olive oil 25 mL
  • 1/4 cup fresh mint, torn 60 mL
  • 1/4 tsp each salt and pepper (optional) 1 mL

Directions

  • Step 1

    In a large bowl, combine all the ingredients. Marinate for 15 to 20 min. Divide among 8 small plates and serve.
