Mix ground turkey with egg, pesto, breadcrumbs and salt. Divide the mixture into 12 portions and shape each into 1/2-in. (1-cm) thick patties. Cover and keep chilled.
Meanwhile, make herbed guacamole by mashing avocado with lemon juice and pesto until smooth. Stir in parsley. Set aside.
Grill turkey patties on barbecue preheated to medium-high, 3 to 4 min. per side until cooked through and no longer pink.
Place turkey patties on half the baguette slices. Top with herbed guacamole, roasted red pepper and remaining baguette slices.
