Pesto Turkey Sliders with Herbed Guacamole

Ingredients

  • 500 g lean ground turkey 1 lb
  • 1 egg
  • `1/4 Cup prepared basil pesto 60
  • 1/4 cup breadcrumbs 60
  • 1/4 tsp salt 1
  • 24 slices baguette (each about 1/2-inch/1 cm thick), toasted
  • 1/2 Cup jarred roasted red peppers, sliced 125 mL
  • Herbed Guacamole:
  • 1 ripe avocado, pitted and peeled
  • 1 tbsp lemon juice 15 mL
  • 1 tsp prepared basil pesto 5 ml
  • 1 tbsp finely chopped fresh parsley 15 mL

Directions

  • Step 1

    Mix ground turkey with egg, pesto, breadcrumbs and salt. Divide the mixture into 12 portions and shape each into 1/2-in. (1-cm) thick patties. Cover and keep chilled.

  • Step 2

    Meanwhile, make herbed guacamole by mashing avocado with lemon juice and pesto until smooth. Stir in parsley. Set aside.

  • Step 3

    Grill turkey patties on barbecue preheated to medium-high, 3 to 4 min. per side until cooked through and no longer pink.

  • Step 4

    Place turkey patties on half the baguette slices. Top with herbed guacamole, roasted red pepper and remaining baguette slices.
