Mushroom, Onion & Gruyère Soup

Ingredients

  • 1 tbsp olive oil 15 mL
  • 1 onion, diced
  • 1 lb sliced mixed mushrooms 500 g
  • 4 cups vegetable broth 1 L
  • 2 cups milk 500 mL
  • 1 tsp chopped fresh thyme leaves 5 mL
  • 1 1/2 cups grated Gruyère cheese, to serve 375 mL

Directions

  • Step 1

    Heat oil in large saucepan over medium heat. Add onion and mushrooms. Cook until onion turns golden and no liquid remains, about 8 min.

  • Step 2

    Add broth and milk. Bring to a boil then reduce to a simmer. Add thyme and cook 5 min. Remove soup from heat and ladle into bowls. Top each bowl with cheese to serve.
