Multicooker Pasta Primavera

Ingredients

  • 2 tbsp olive oil 30 mL
  • 1 red pepper, diced
  • 1 zucchini, diced
  • 1 carrot, diced
  • 1 jar Sensations by Compliments Marinara Sweet Basil Sauce 650 mL
  • 3 cups Compliments Fusilli Dried Pasta 750 mL
  • 1/4 cup finely chopped fresh parsley 60 mL
  • 1/4 cup 35% whipping cream (optional) 60 mL

Directions

  • Step 1

    Set multicooker on SAUTE function according to manufacturer’s instructions. Add oil. Cook red pepper, zucchini and carrot 2 min., or until veggies start to soften.

  • Step 2

    Stir in pasta sauce, 2 cups (500 mL) water and pasta. Lock on lid. Set on HIGH PRESSURE for 8 min., or until pasta is al dente. Manually release pressure according to manufacturer’s instructions before removing lid.

  • Step 3

    Stir in parsley and cream, if using, to serve

Tip

Top with grated Parmesan cheese.

For an easy pasta bake, mix shredded mozzarella with leftover pasta, top with additional cheese, bake until golden.
