In small saucepan combine 1/4 cup (60 mL) water, sugar, maple syrup and cinnamon stick. Bring to a boil over high heat. Continue boiling 1 min., or until thickened slightly. Remove from heat; discard cinnamon stick. Set aside.
In separate saucepan, bring apple cider to a boil over medium-high heat. Remove from heat. Stir in bourbon, lemon juice, plus half the reserved syrup mixture (chill remainder to use another time). Pour into mugs and top with lemon slices.
The syrup mixture can be made in advance and refrigerated. Serve over pancakes or waffles, or to sweeten coffee.
