Lobster with Gribiche Sauce

Ingredients

  • 1 hard-boiled egg, peeled and chopped
  • 4 tsp capers, chopped 20 mL
  • 4 tsp finely chopped shallots 20 mL
  • 1/3 cup crème fraîche 75 mL
  • 2 tbsp mayonnaise style dressing 30 mL
  • 1/4 tsp hot sauce 1 mL
  • 2 tbsp chopped fresh tarragon leaves 30 mL
  • 1 1/2 lb 2 lobsters, boiled or steamed, shells removed 750 g

Directions

  • Step 1

    In a bowl, combine chopped egg, capers, shallots, crème fraîche, mayonnaise, hot sauce and tarragon.

  • Step 2

    Arrange lobster meat on a platter. Serve sauce in a bowl on the side.

Tip

Easy to prepare, this tangy sauce makes for an even more special lobster dipper.
