Italian Bean Salad with Tuna & Artichoke

Ingredients

  • 1 can Six Bean Blend, drained and rinsed 540 mL
  • 1 can flaked albacore white tuna in water 170 mL
  • 1 cup canned artichoke hearts, drained, rinsed, quartered 250 mL
  • 1/3 cup diced red onion 75 mL
  • 2 tbsp capers, drained and rinsed 30 mL
  • 2 tbsp olive oil 30 mL
  • 1 lemon juiced
  • 1/2 tsp Italian seasoning 2 mL
  • 1/4 tsp salt 1 mL
  • 2 cups lightly packed spinach 500 mL

Directions

  • Step 1

    In a large bowl, add beans, tuna, artichokes, red onion and capers and stir to break up tuna.

  • Step 2

    In a small bowl, whisk together oil, 2 tbsp (30 mL) lemon juice, Italian seasoning and salt. Pour over tuna mixture. Add spinach and gently stir to combine. Add more lemon juice, if desired.

Tip

Capers give a slight mustardy and peppery flavour.
