Whip mascarpone with whipping cream and 1 tbsp (15 mL) honey until light and fluffy. Set aside.
Grill peach, plum and apricot halves on barbecue preheated to medium-high, 3 to 5 min. per side or until tender and grill-marked. Remove fruit from grill and cut each piece in half or large wedges.
Place waffles on 4 plates. Top with grilled fruit, drizzle with remaining honey. Add dollop of mascarpone mixture and sprinkle almonds over top.
Substitute cream cheese for mascarpone cheese. Garnish with thinly sliced mint.
