Grilled Scallops with Mango Curry Glaze

Ingredients

  • 1 pkg Wild Atlantic Canada Sea Scallops (20-40 ct), thawed, rinsed and patted dry 400 g
  • 12-14 metal skewers 0
  • 1/8 tsp each salt and pepper 0.5 mL
  • 1/4 cup Mango Curry Barbecue Sauce 60 mL
  • 1 lime, cut in half 0
  • 2 tbsp finely chopped chives 30 mL

Directions

  • Step 1

    Preheat barbecue to high. Push a skewer through sides of 2 scallops, repeat for remaining scallops. Season with salt and pepper.

  • Step 2

    Set scallops onto grill. Brush with mango curry sauce and grill until cooked through and lightly charred, 2 to 3 min. per side.

  • Step 3

    Using tongs transfer skewers to a platter, squeeze lime juice overtop and sprinkle with finely chopped chives.
