Grilled Balsamic Tomatoes with Basil Crouton Topping

Ingredients

  • 2 tbsp balsamic vinegar 30 mL
  • 2 tbsp olive oil 30 mL
  • 4 firm, ripe tomatoes, cut in half horizontally
  • 3/4 cup Sensations by Compliments Balsamic & Black Pepper Croutons,
    coarsely crumbled
    175 mL
  • 3 tbsp fresh Compliments Basil, coarsely chopped 45 mL
  • 1/4 tsp each salt and pepper 1 mL

Directions

  • Step 1

    Preheat barbecue to medium-high. In a small bowl, whisk balsamic vinegar with olive oil. Lightly brush cut tomato sides with a little vinegar mixture.

  • Step 2

    Grill cut-side down, until slightly tender, 3 to 5 min. Baste with vinegar mixture, turn and grill for 2 min. more. In a bowl, toss croutons with basil. Plate tomatoes cut-side up, drizzle with remaining vinegar mixture and sprinkle with salt and pepper and crouton mixture. Serve immediately.
