Greek-Style Bean Burgers

Ingredients

  • 2 tbsp olive oil, divided 30 mL
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 can Six Bean Blend, drained and rinsed 540 mL
  • 1/2 tsp salt 2 mL
  • 1/2 tsp pepper 2 mL
  • 3/4 cup fresh whole-wheat breadcrumbs 175 mL
  • 1 Omega 3 egg
  • 4 small whole-wheat pitas, grilled
  • 1/4 cup Tzatziki Yogourt & Cucumber Dip 60 mL
  • sliced tomato, red onion and cucumber (optional)

Directions

  • Step 1

    Heat 1 tbsp (15 mL) oil in a medium, nonstick skillet over medium heat. Add onion and garlic. Cook, stirring often, until tender, about 5 min. Cool slightly.

  • Step 2

    In a food processor, combine onion mixture, beans, salt and pepper. Pulse until mixture is finely chopped and combined but not smooth. Transfer to a bowl. Add breadcrumbs and egg; mix until well combined. Form into 4 equal-size patties.

  • Step 3

    Heat remaining oil in a grill pan or foil-lined grill over medium heat. Grill patties until golden and firm, about 6 min. per side. Serve patties on grilled whole-wheat pitas and top with tzatziki. Garnish with tomato, onion and cucumber (if using).
