Greek Salad with Mint

Ingredients

  • 2 tbsp pitted and halved Kalamata olives 30 mL
  • 2 tbsp olive oil 30 mL
  • 1 tbsp red wine vinegar 15 mL
  • 1 tsp minced garlic 5 mL
  • 1/2 tsp pepper 2 mL
  • 4 cups chopped Romaine hearts 1 L
  • 1 cup cherry or grape tomatoes 250 mL
  • 1/2 English cucumber, halved lengthwise, thickly sliced 0
  • 1/4 cup fresh mint 60 mL
  • 2 tbsp feta, crumbled 30 mL
  • 1/4 cup roughly broken Sea Salt Baked Pita Chips 60 mL

Directions

  • Step 1

    In large bowl, whisk together olives, olive oil, vinegar, garlic and pepper. Let stand 10 min. for flavours to combine. Add lettuce, tomatoes, cucumber, mint, feta and pita chips. Toss well.

Tip

Flavoured pita chips add texture and a satisfying crunch.
