Fish Tacos with Cucumber-Apple Salsa

Ingredients

  • 1 lb fresh haddock fillets or any white-fleshed fish (cook in 2 Seafood Steamer bags with Garlic-Parsley Butter Pucks according to package directions) 500 g
  • 1 cup finely diced English cucumber 250 mL
  • 1 cup finely diced green apple 250 mL
  • 1/4 cup finely diced orange pepper 60 mL
  • 1/4 cup finely diced red onion 60 mL
  • 1/2 red chili pepper, seeded and thinly sliced
  • 3 tbsp lime juice 45 mL
  • 2 tbsp chopped cilantro 30 mL
  • 1/2 tsp salt 2 mL
  • 8 whole-wheat tortillas (7 in./18 cm), warmed

Directions

  • Step 1

    Cook fish according to Seafood Steamer bag directions.

  • Step 2

    Meanwhile, in bowl, mix cucumber, apple, pepper, onion, chili, lime juice, cilantro and salt. Let stand 5 min

  • Step 3

    Halve each fish fillet lengthwise. Place on side of each tortilla, top with salsa and fold over.
