Easy Black Bean Burritos

Ingredients

  • 2 tbsp canola oil 30 mL
  • 2 peppers, diced (green or red)
  • 1 onion, diced
  • 2 tbsp taco seasoning 30 mL
  • 1 can no salt added black beans, drained and rinsed 19 oz
  • 1 cup diced tomatoes 250 mL
  • 4 Compliments 100% Whole Grain Whole Wheat Tortillas
  • 1 1/3 cups Sensations by Compliments Triple Cheddar Shredded Cheese Blend 325 mL
  • 1/2 cup Compliments Guacamole (optional) 125 mL
  • 1/2 cup salsa (optional) 125 mL
  • 1/2 cup sour cream (optional) 125 mL

Directions

  • Step 1

    Heat oil in large skillet over medium heat. Add peppers, onion and taco seasoning; cook 5 min. until veggies soften. Stir in black beans, tomatoes and 1/4 cup (60 mL) water; cook about 10 min. until mixture is still moist but no excess liquid remains.

  • Step 2

    Spread bean mixture onto tortillas, leaving 1-in. (2.5-cm) border. Top with cheese. Fold edge of tortilla over filling, fold in sides, roll up to enclose filling. Make 4 burritos. Serve with guacamole, salsa and sour cream, if desired.

Tip

Add rotisserie chicken, cooked ground beef or leftover quinoa for added protein.

For crisp burritos, brush tortillas lightly with oil. Place on heavy skillet or grill pan over medium heat; about 3 min. per side until golden.
