Easy Asparagus & Crab Crustless Skillet Quiche

Ingredients

  • 2 tbsp olive oil 30 mL
  • 1 tbsp butter 15 mL
  • 1 red pepper, finely chopped
  • 1/2 bunch asparagus, trimmed and cut into 1-inch (2.5 cm) pieces 250 g
  • 8 eggs
  • 3/4 tsp salt 4 mL
  • 1 cup shredded Swiss cheese 250 mL
  • 1 pkg crab flavoured surimi, cut into bite-size pieces 227 g
  • 3 green onions, finely chopped, divided

Directions

  • Step 1

    Heat oil and butter in 10-in. (25 cm) oven-safe non-stick skillet set over medium-high heat. Add red pepper and asparagus and cook for 1 to 2 min. or until tender-crisp. Meanwhile, whisk eggs with 1/4 cup (60 mL) water and salt then stir in cheese, crab and green onions.

  • Step 2

    Add egg mixture to skillet, reduce heat to medium then cover and cook for 5 min. Preheat broiler to high heat. Transfer skillet under broiler, 6-in. (15 cm) from heat, for 8 min. or until eggs are set.
