Crispy Onion & Green Bean Casserole

Ingredients

  • 2 tbsp olive oil 30 mL
  • 3 shallots, sliced
  • 1/2 lb thinly sliced mushrooms 250 g
  • 3 cloves garlic, minced
  • 1 tbsp finely chopped fresh thyme 15 mL
  • 1 tbsp Dijon mustard 15 mL
  • 1/4 tsp each salt and pepper 1 mL
  • 2 tbsp all-purpose flour 30 mL
  • 1 cup sour cream 250 mL
  • 1 pkg frozen green beans (or green and wax beans), thawed 750 g
  • 1/3 cup grated Parmesan cheese 75 mL
  • 1 cup packaged crispy fried onions 250 mL

Directions

  • Step 1

    Preheat oven to 200ºC (400ºF). Heat oil in large skillet set over medium heat. Cook shallots 3 to 5 min. until starting to brown. Add mushrooms, garlic, thyme, mustard, salt and pepper. Cook 6 to 8 min. until mushrooms start to brown. Sprinkle on flour and stir through. Cook 2 min. until no dry flour remains. Remove from heat.

  • Step 2

    Stir in sour cream until sauce is smooth. Fold in green beans and Parmesan. Spoon into greased 13 x 9-in. (3-L) baking dish. Sprinkle fried onions overtop.

  • Step 3

    Bake 25 to 35 min., until golden brown and bubbling. Let stand 10 min. before serving.

Tip

This dish can be assembled, covered and refrigerated up to 8 hr. before baking.
