Ingredients
- 1 cup
- Compliments Semi-Sweet Chocolate Chips
- 250 mL
- 1½ cups
- 35% cream, divided
- 375 mL
- ¼ tsp
- sea salt
- 1 mL
- 1 tbsp
- icing sugar
- 15 mL
- 1 tsp
- pure vanilla extract
- 5 mL
- 1 can
- Compliments Creamy Whip Whipped Cream Topping, for garnish

- clementine, peeled and sliced into rounds, for garnish Compliments Caramel Popcorn, for garnish
Directions
Step 1
Combine chocolate chips with ½ cup (125 mL) cream and salt in a large heat-proof bowl. Microwave on high until half melted, about 30 sec. Stir with a spatula until completely melted. Set aside to cool completely.
Step 2
Beat remaining 1 cup (250 mL) cream with sugar and vanilla extract in a medium bowl, using an electric mixer on medium-high, until soft peaks form, 1 to 2 mins.
Step 3
Fold one-third of cream into cooled chocolate mixture until no streaks remain. Then gently fold in remaining cream until no streaks remain. (Don’t over-fold or it will lose volume.)
Step 4
Spoon mousse into four ¾ cup (175 mL)-sized serving glasses or dishes. Refrigerate until chilled, about 1 hr.
Step 5
Just before serving, garnish mousse with whipped cream, clementine rounds and popcorn.
