Canadian Onion Soup

Ingredients

  • 3 tbsp canola oil 45 mL
  • 4 lb white onions, thinly sliced 2 kg
  • 3 cloves garlic, minced
  • 1/2 cup 100% Compliments Organic Pure Maple Syrup 125 mL
  • 1 carton Compliments Fat Free Beef Broth 900 mL
  • 1 tbsp chopped fresh thyme leaves (approx.) 15 mL
  • salt and pepper
  • 6 slices baguette, toasted
  • 2 cups shredded Compliments Five Year Canadian Cheddar Cheese 500 mL

Directions

  • Step 1

    Heat oil in a Dutch oven set over medium heat. Add onion and cook, stirring frequently, for 30 minutes or until caramelized. Add garlic and cook for 30 seconds. Stir in maple syrup.

  • Step 2

    Add the broth and half of thyme; bring to a boil. Reduce heat and simmer for 20 minutes. Season to taste with salt and pepper. Preheat broiler.

  • Step 3

    Divide soup between 6 ovenproof bowls. Top with toast slices and equal amounts of cheese. Broil for 2 to 3 minutes or until cheese melts and lightly browns. Garnish with remaining thyme and serve.
