Brown Butter Mushroom Toast with Goat Cheese

Ingredients

  • 2 tbsp butter 30 mL
  • 1 lb mixed sliced mushrooms, such as cremini, shiitake, oyster 500 g
  • 2 tsp finely chopped fresh thyme 10 mL
  • 1 tsp salt 5 mL
  • 4 slices sourdough bread, toasted
  • 2 tbsp crumbled goat cheese, divided 30 mL

Directions

  • Step 1

    Heat large non-stick skillet over medium heat. Cook butter until foamy and beginning to brown, about 3 min. Add mushrooms, thyme and salt. Cook, stirring often, until liquid has been absorbed and mushrooms begin to brown, 8 to 10 min.

  • Step 2

    Divide mushroom mixture over bread slices. Sprinkle goat cheese on top.
