Balsamic Strawberry Mascarpone Crostini

Ingredients

  • 1 pint strawberries sliced
  • 1 tbsp sugar 15 mL
  • 1 tbsp balsamic vinegar 15 mL
  • ½ tsp black pepper 2 mL
  • 1 baguette, cut into ½” slices
  • 1-2 tbsp extra virgin olive oil 15-30 mL
  • 1 cup mascarpone cheese 250 mL
  • Drizzle of honey
  • 1 tbsp chopped hazelnuts 15 mL

Directions

  • Step 1

    Preheat the oven to 220˚C (425˚F)

  • Step 2

    In bowl, gently toss the strawberries, sugar, vinegar and pepper; set aside.

  • Step 3

    Place baguette slices on baking sheet. Brush tops with oil. Bake until golden and crisp, about 4 min., check frequently to avoid scorching. Remove from oven; cool slightly.

  • Step 4

    Spread bread with mascarpone. Top with strawberry mixture. Drizzle with a little leftover syrup from the bowl and honey. Sprinkle with hazelnuts. Serve immediately.
