Barbecued Brie with Fresh Herbs

Ingredients

  • 1/4 cup fresh parsley, finely chopped 60 mL
  • 1/4 cup fresh basil, finely chopped 60 mL
  • 2 garlic cloves, minced
  • 2 tbsp fresh lime juice 30 mL
  • 1 tsp hot sauce 5 mL
  • 1 wheel double cream Brie cheese 350 g
  • 2 tbsp red pepper, finely chopped 0

Directions

  • Step 1

    Preheat grill to medium-low. Prepare the herb mixture in a small bowl by combining the parsley, basil and garlic. Add lime juice and hot pepper sauce; stir well and set aside.

  • Step 2

    Cut the brie horizontally into two discs. Place the lower half of the cheese, rind down, onto a lightly oiled, double layer of foil. Spread herb mixture onto cheese and sprinkle with red peppers. Cover with top cheese disc.

  • Step 3

    Close the foil tightly around cheese, and grill for 15 to 20 min., or until the cheese is soft. Remove from foil and serve immediately.
