Apple & Pistachio Chutney

  • Makes: 3 3/4 cups (925 mL)

Ingredients

  • 4 cups peeled, cored and diced Gala apples 1 L
  • 1/2 cup sugar 125 mL
  • 1 tsp lemon zest 5 mL
  • 2 tbsp lemon juice 30 mL
  • 1 1/2 tsp grated fresh ginger 7 mL
  • 1 tsp salt 5 mL
  • pinch cayenne pepper
  • 2/3 cup shelled pistachios, coarsely chopped 150 mL

Directions

  • Step 1

    Combine apples, sugar, 1/2 cup (125 mL) water, lemon zest, lemon juice, ginger, salt and cayenne pepper in medium saucepan. Cook over medium heat until apples are softened but still keep their shape, about 20 min. Remove from heat; let stand to cool. Stir in pistachios.

  • Step 2

    Ladle chutney into re-sealable containers such as small Mason jars and refrigerate for up to one week.

Tip

Don’t have any pistachios? Walnuts, hazelnuts or almonds work equally well.
