Its delicate emerald leaves add a burst of colour to your favourite recipes. From salads to dips, spinach works well with many flavours: Try it wilted with butter and lemon, nestled between layers of phyllo for spanakopita, or tossed into a refreshing smoothie.

When picking out spinach, check for slimy leaves – this means the spinach is past its prime. At home, store spinach in an open plastic bag in the fridge.
