When there’s ready-made stock on-hand, a satisfying bowl of soup is just minutes away. Starring three hero ingredients, these quick and easy recipes feature delicious produce.


1. Potato + Curry + Spinach

Save this soup for busy weeknights when a bowl of comfort food is in order. Serve with toasted Sensations by Compliments Naan for dunking.

Make it: Simmer potatoes in stock until they’re tender. Add as much spinach as you like and blend until smooth. Add curry to taste and garnish with chopped green onions.

2. Leek + Cauliflower + Apple

Make it: In a large roasting pan, toss cleaned leeks, cauliflower florets and apple chunks with olive oil, salt and pepper. Roast until tender, then blend with stock. Garnish with sage.

Tip: Leeks often have gritty soil trapped between the layers. To remove, add your chopped leeks to a bowl of cold water and swirl them around a few times. Lift out onto a work surface, discard the gritty water and repeat a few times until no grit remains in the bowl.


3. Mushroom + Onion + Gruyère

The gooey Gruyère will have everyone asking for seconds of this earthy soup topped with crunchy croutons.

Make it: Sauté onions and mushrooms until golden, then add stock and blend to desired texture. Finish with grated Gruyère and a handful of croutons.

Tip: Any mushroom variety will work in this recipe. Experiment with portobellos, creminis, shiitakes and oyster mushrooms. And don’t toss those stems – they’ll add even more flavour to this smooth favourite.
