Court Boullion Recipe
Use this court boullion to create your next shrimp cocktail.
Recipe Ingredients
| 1 | Spanish onion, thinly sliced | |
| 2 | carrots, thinly sliced | |
| 4 | stalks celery, thinly sliced | |
| 1 | head of garlic, halved | |
| 2 | bay leaves | |
| 1 tbsp | peppercorns | |
| 1 | small bunch parsley | |
| 1 | lemon, halved | |
| 1 cup | white wine | |
| 2 cups | water | |
| Good pinch of sea salt |
Recipe Directions
- Combine all ingredients in a large pot.
- Bring to a simmer for 30 minutes, skimming off any impurities that rise to the surface.
- Strain and use to poach seafood immediately or let cool to room temperature and refrigerate/freeze until needed.
