Recipe Ingredients

1 Spanish onion, thinly sliced
2 carrots, thinly sliced
4 stalks celery, thinly sliced
1 head of garlic, halved
2 bay leaves
1 tbsp peppercorns
1 small bunch parsley
1 lemon, halved
1 cup white wine
2 cups water
Good pinch of sea salt
 

Recipe Directions

  1. Combine all ingredients in a large pot.
  2. Bring to a simmer for 30 minutes, skimming off any impurities that rise to the surface.
  3. Strain and use to poach seafood immediately or let cool to room temperature and refrigerate/freeze until needed.
