It's All About The Feast!

Growing up in Australia my family and food memories that are closest to my heart were the times my mum, dad, sister, brother and all of my aunts, uncles and cousins (well most of them anyway!) would all come to visit and the focus was always around the main meals.
The bulk of the day was taken up in either the preparation for the meals or going to the beach and I was always around my mums feet and generally making a nuisance of my self in the kitchen (which has not changed). All I could think about were the various and amazingly abundant dishes that were going to be created and enjoyed by all my family.
My Aunts would prepare their own holiday recipes, as would my mum. The feast would consist of several dishes including potato and pasta dishes, various side vegetables and salads and 2 or 3 different roasted, barbequed or baked meats served either hot or cold. These delectable dishes which when it was laid out, be it on the table or on a table cloth spread on the sand at the beach with my whole family around it made up my most fondest memories. It is probably one of the main reasons I became a chef.
