Heart Month Mediterranean Meal

This big idea is inspired by Heart Month. One of the ways I like to get flavour into my recipes is to do it with spices. Using dried spices and herbs enables us to keep the use of salt and fat to a minimum. Of course using salt and fat is ok; we are just trying to limit the need for adding extra to achieve flavourful dishes. During the winter months when fresh spices and herbs are less readily available, dried spices and herbs are the next best thing and if used properly you will very much enjoy the results in your recipes. In the menu I use dried spices and herbs to give a twist and a flavour boost to create a Mediterranean feel which will warm up any cold winter’s day.
