Chopped Broccolini & Spinach Salad

Ingredients

  • 3 tbsp fresh lemon juice 45 mL
  • 3 tbsp olive oil 45 mL
  • 2 tsp honey 10 mL
  • 1/4 tsp salt 1 mL
  • 1 bunch broccolini, ends trimmed, chopped 0
  • 1/2 pkg baby spinach, chopped into approx. 1/2-in. (2 cm) pieces 312 g
  • 1 cup lightly packed pea or alfalfa sprouts, coarsely chopped 250 mL
  • 3 tbsp dried cranberries, coarsely chopped 45 mL
  • 2 carrots, shredded 0
  • 1 tbsp chopped fresh chives 15 mL
  • 1/2 pkg crumbled goat cheese 62 g

Directions

  • Step 1

    In a small bowl, combine lemon juice, olive oil, honey and salt and stir well. Set aside. In a large bowl, mix together broccolini, spinach, pea or alfalfa sprouts, cranberries, carrots and chives. Toss with lemon dressing. Garnish with goat cheese crumbles and serve.
