Preheat oven to 350°F (180°C). In a deep skillet, heat 1 tbsp (15 mL) canola oil and sauté both a thinly sliced large onion and red pepper over medium until tender, 5 to 7 min.
Sprinkle with 1 tsp (5 mL) Compliments Taco Seasoning Mix and add 1/4 cup (60 mL) water. Add 2 cups (500 mL) cubed Compliments BBQ Chicken and toss until just warmed. Meanwhile, wrap 4 large whole-wheat tortillas in foil and warm in oven for 5 to 10 min.
Combine 1 cubed avocado, the juice of 1 lemon, 1 cup (250 mL) grape tomatoes, halved, 1 tbsp (15 mL) finely chopped fresh cilantro and 1/4 tsp (1 mL) salt in a small bowl. Set out chicken filling, tortillas and salad for a ready-to-make fajita bar.
