Chicken & Apple Salad Sandwich

Ingredients

  • 1/2 cup plain 2% Greek yogourt 125 mL
  • 2 tbsp reduced-fat mayonnaise 30 mL
  • 1 tbsp grainy mustard 15 mL
  • 1/2 tsp salt 2 mL
  • 1/4 tsp pepper 1 mL
  • 1 ½ cups cubed leftover cooked chicken (store-bought, grilled, baked or poached) 375 mL
  • 1 cup diced red apple 250 mL
  • 1/4 cup chopped toasted walnuts 60 mL
  • 1/4 cup raisins 60 mL
  • 3 tbsp finely chopped green onion 45 mL
  • 4 multigrain buns, split

Directions

  • Step 1

    In large bowl, mix yogourt, mayonnaise, mustard, salt and pepper. Stir in chicken, apple, walnuts, raisins and green onion.

  • Step 2

    Fill 4 buns with the chicken salad.

Tip

Alternatively, serve chicken salad in lettuce cups or on crackers.
