packed brown sugar 75 mL
maple syrup, divided 75 mL

Canadian whisky 250 mL
lime juice 125 mL
Compliments Ginger Ale, chilled 650 mL
wooden (soaked) or metal skewers (length to span glass rim)

Directions

  1. Preheat oven to 400˚F (200˚C). In small bowl, stir together brown sugar, 3 tbsp (45 mL) maple syrup and cayenne pepper. Brush mixture onto both sides of bacon slices. Thread tightly onto skewers. Arrange skewers on rack of foiled-lined roasting pan. Bake about 15 to 18 min., turning over halfway, until bacon is browned and crispy. Transfer to paper towel-lined dish to cool completely.
  2. Meanwhile, in pitcher, stir together whisky, lime juice and remaining maple syrup. Stir in ginger ale. Pour over 6 low-ball glasses filled with ice. Place candied bacon skewers across rims. Serve immediately.

Substitute whisky with bourbon or rye.
