Basic Tomato Sauce

Ingredients

  • 1 tbsp olive oil 15 mL
  • 1 onion, finely diced
  • 2 cloves garlic, finely chopped
  • ½ cup red wine, optional 125 mL
  • 2 cans whole tomatoes 796 mL each
  • ½ tsp salt 2 mL
  • ¼ tsp pepper 1 mL
  • ¼ cup finely chopped fresh basil 60 mL

Directions

  • Step 1

    Heat oil in large saucepan over medium heat. Add onion and cook until it starts to soften, 3 to 4 min. Add garlic and cook 1 to 2 min., until golden. Add red wine, if using, and cook 1 to 2 min. until almost all the wine has cooked off. Stir in tomatoes, salt and pepper. Bring just to a boil over high heat then reduce heat to low. Simmer 40 min., until sauce thickens, stirring occasionally and breaking up tomatoes. Stir in basil just before serving.

Tip

Brown 1 lb (500 g) ground beef with the onion to make a classic meat sauce.
